Great for making kimchi but not overly spicy like Thai peppers! While not as hot as a Thai pepper it is a deeper red color. Which allows you to make kimchi that is very red but not so hot as to set your guests mouths on fire. They are still fairly hot though so be careful. Very easy to dry. This type of pepper is traditionally used to make a spicy Korean gochugaru, the dried, coarsely ground red pepper flakes that are a key ingredient in many types of kimchi and sauces. Similar to a cayenne in shape but a bit shorter.
