The peppers are very fragrant and tasty. Absolutely amazing on your grill, this however may make your neighbors jealous when they smell them! They have a thick flesh and were traditionally roasted on flat metal stoves, peeled, amd ground into a traditional relish called ajvar, which is eaten spread on bread, often with sirenje, a local cheese similar to feta. In the fall, North Macedonians head to the local village markets to buy bushels of the best aromatic roasting peppers.
